The probe is pointing to the palatine bone, which makes up the posterior-most 1/4th of the hard palate ("roof" of the mouth). The bone suture located directly above the probe in this photo shows the fusion of the palatine bone with the maxillae (which compose the anterior 3/4ths of the hard palate).
