The probe is pointing to the palatine process of maxilla, which is a thick, horizontal process of the maxilla. It forms the anterior 3/4 ths of the hard palate (the entire "roof" of the mouth"), while the horizontal plate of the palatine bone makes up the rest (posterior 1/4th of the hard palate).
